Hand forged bunka by Yoshida Hamono, a Japanese family business with a centuries-old tradition in the production of Japanese swords (Katanas). Yoshida Hamono has a great deal of experience in traditionally forging ZDP-189 steel. The core of the blade of this knife is made of ZDP-189 steel coated with stainless steel. This blade has a hardness of 65/67 HRC and measures 190mm. The octagonal shaped handle is made of rosewood.
The blade is finished according to the process called Kuro-uchi, which in Japanese literally means "black coat", meaning the blade is not polished but is left with the dark patina to protect the blade and give it a traditional Japanese rustic look. The knife shows the visible signs of the hand forging process and this gives it a nice finish and also prevents food from sticking to the blade.
The Bunka is a very versatile knife and can be used for both fish, meat and vegetables.
This knife if used and treated with care is destined to last a long time.
Use and maintenance:
- Wash by hand after each use, without the use of harmful detergents and metal sponges that could damage the blade, and dry the knife with a soft cloth.
- Do not cut bones or frozen food as the blade may chip.
- To sharpen the knife use a stone and not a sharpener.
